The presence of fats, oils and grease (FOGs) in industrial and commercial effluents
pose several problems in drainage systems, both within the building producing
them and externally in receiving sewerage infrastructure. Biological addition
(bioaugmentation) is a suitable means of FOG management in food service
establishments (FSE’s). Commercially available FOG-degrading supplements are
designed to be added to kitchen drains. However, the performance and
efficacy of these systems is still relatively poorly understood. The aim of the project is to
develop a standardised method for the determination of efficacy and kinetics of
the microbial community in response to FOGs, with and without addition of
commercial bioadditives.
